The first website article is dedicated to myself!
I've been working in coffee for a decade, starting from scratch and now owning my own brand. My passion for coffee, both intellectually and practically, and my spirit for experimentation remain undiminished. I'm always asking myself: Why this or that? Is there another way? I have a childlike curiosity and thirst for knowledge.
This pursuit and persistence in coffee led me to the world of coffee roasting. (Isn't it fitting that someone with such a torturous personality would also be a good fit for me to study coffee roasting? Haha)
It was in 2020, during the second pandemic, that I re-examined my role and thoughts in the coffee industry.
I decided to create a brand based on what I really like and what I want to present.
The three core values of the brand are set:
Professional, interesting, and skilled
Professional technology, interesting content, and the persistence of craftsmen.
I hope to use the flavor of coffee from the perspective of a coffee roaster to interpret the attitudes of more craftsmen.

Here, there is no formula for coffee. The most delicious coffee is the one that is flavored according to your mood.
◆ The spirit of craftsmen
In the early days, they were just artisans or masters, but in modern times, the scope has expanded to include artisans in all fields. They spend a lot of energy and time to continuously improve in their professional fields, delving into details and doing things to the utmost.

What I want to do is to convey the spirit and personality of craftsmen through coffee.
For me, each craftsman's dedication to their work, their imagery, and the emotions they project into their creations, all create their own unique colors and flavors. I want to use my roasting expertise to create these flavors through bean blends, and share them with everyone. Just like each craftsman and their unique creations, the resulting coffee beans and flavors will be unique, like the Little Prince and his rose.
Collaboration with artisans is an important planning direction for our brand, which will be announced to everyone in different forms and methods. I look forward to the announcement, it will definitely be exciting!
In addition to the formula beans, we currently sell single-item beans, ear-hook bags, and some interesting peripheral products. We hope that everyone who comes to Billy Roaster to buy will feel happy and satisfied.
◆Choice of coffee roaster——Direct fire series coffee roaster
Times have changed, and nowadays, most people choose semi-hot air or full hot air models. Direct fire is rare in Taiwan. I believe the aroma and flavor profile produced by direct fire more directly reflect the operator's intentions. Its directness and explosiveness create its uniqueness. It is precisely because of this rarity and the difficulty of operation that I have a strong desire to explore and research.
I think this is the fun part of roasting beans!
The two partners who are currently working with me in the studio are:
1. Vulcan V-600 Plus
Made in Taiwan. Small but comprehensive, it's currently used for proofing and small-batch baking, and many regular customers request it.

2. Japan Fuji Direct Fire <br>When I first decided to enter the world of baking, I hoped to own a Fuji in the future! I never thought that fate would make my dream come true.
When I first came into contact with Fuji direct fire, it was really a beast that was difficult to control. I don’t know how many beans I burned before I could grasp some of its habits.

◆Studio——Our 1970s
Although the brand focuses on online sales, the studio layout is not sloppy at all!Everything is the same as when I founded the brand. I did everything from painting the walls, carpentry, flooring, and decoration myself from scratch. I received a lot of help from relatives and friends along the way, and I am really grateful.

Create a pleasant working environment to create a good mood! Delicious coffee comes from a sincere investment in every detail of life and work.


The studio's main colors are large areas of yellow and purple painted walls, and the overall style is oriented towards my favorite 1970s Space Age style. I mixed in some of my own elements to create a unique yet warm place for roasting beans.


However, it is not open to the public at the moment. If there are suitable events in the future, it may be open to the public and you can make an appointment to taste the coffee!
